Berry Compote (Blueberry, Strawberry, Raspberry, and more!)

Description
Get a dose of high-power antioxidants while you satisfy your sweet tooth. This easy, homemade berry compote will be the star of your oatmeal, ice cream, cheesecake, waffles, or--my favorite--pancakes.
Ingredients
1 cup berries of choice
3 tablespoons water
2 teaspoons maple syrup
1 teaspoon vanilla extract
2 teaspoons lemon juice
1 dash salt
Instructions
Bring the berries, maple syrup and water to a boil over medium heat, uncovered.
Reduce to a simmer, stirring occasionally, and cook for 8-10 more minutes, or until the blueberries start to burst. If the blueberries start to stick to the pan, add another tablespoon of water. Towards the end of the cooking time, you can lightly mash the berries with a fork to speed up the process.
Add in your vanilla, lemon juice and salt, and adjust seasonings to taste.
